Ingredients

  • 1/2 cup (1 stick) butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy.
  3. Mix in the eggs and vanilla extract until combined.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder and salt.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chocolate chips.
  7. Line a muffin tin with cupcake liners and fill each one about 2/3 of the way with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center of the cupcake comes out clean.
  9. Allow to cool before serving.
