Ingredients
1.5 lbs. small potatoes
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt

Directions
Preheat the oven to 400°F.
Cut the potatoes into 1/2-inch thick slices.
In a large bowl, combine the potatoes, olive oil, garlic powder, oregano, salt and pepper. Toss to coat.
Arrange the potatoes in a single layer in a 9x13 inch baking dish. Top with the prosciutto.

Sprinkle with the parsley before serving.
