Ingredients
- 1.5 lbs. small potatoes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces thinly sliced prosciutto
- 2 tablespoons finely chopped fresh parsley
Directions
- Preheat the oven to 400°F.
- Cut the potatoes into 1/2-inch thick slices.
- In a large bowl, combine the potatoes, olive oil, garlic powder, oregano, salt and pepper. Toss to coat.
- Arrange the potatoes in a single layer in a 9x13 inch baking dish. Top with the prosciutto.
- Bake for 30-35 minutes, or until the potatoes are golden brown and cooked through.
- Sprinkle with the parsley before serving.
