Ingredients

  • 1/2 pound fresh figs, washed, stemmed, and cut into quarters
  • 4 cups baby arugula leaves
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped toasted walnuts
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the figs, arugula, feta cheese, and walnuts.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
