Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cups vegetable broth
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 cups half-and-half
  • 1 cup shredded cheddar cheese

Directions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 3 minutes.
  2. Add the carrots and celery, and cook until softened, about 5 minutes.
  3. Pour in the vegetable broth, and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  4. Add the corn, green beans, salt, pepper, cayenne, oregano and thyme. Simmer for 15 minutes.
  5. Stir in the half-and-half, and heat until warm. Do not boil.
  6. Add the cheese, and stir until melted. Serve warm.
