Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, cut into wedges
  • 2 tablespoons melted butter

Directions

  1. Preheat the oven to 400°F. Grease a 9x13-inch baking dish with cooking spray.
  2. In a small bowl, mix the olive oil, garlic powder, oregano, paprika, salt, and pepper. Rub the mixture all over the chicken breasts and place in the baking dish.
  3. Toss the potatoes with the melted butter, then place them around the chicken in the dish. Sprinkle with additional salt and pepper, if desired.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Serve warm and enjoy!
