3 boneless, skinless chicken breasts, cut into cubes
1/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 cup vegetable oil
1/2 cup chicken broth
1/4 cup soy sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
2 tablespoons cornstarch
2 tablespoons cold water
1/4 cup green onions, chopped
Directions
In a medium bowl, mix together the flour, cornstarch, baking powder, salt, white pepper, garlic powder, and cayenne pepper.
Add the cubed chicken to the mixture and toss to coat.
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
In a separate small saucepan, whisk together the chicken broth, soy sauce, rice wine vinegar, and brown sugar. Bring to a boil and then reduce the heat to low.
In a small bowl, mix together the cornstarch and cold water. Add to the boiling sauce and whisk until the sauce has thickened slightly.
Add the cooked chicken to the sauce and stir to coat. Simmer for a few minutes until the sauce has thickened and the chicken is cooked through.
Remove from heat and stir in the green onions. Serve over rice or noodles.
