Ingredients
1 cup raw cashews
1/2 cup water
1 tablespoon lemon juice
1 tablespoon nutritional yeast
1 teaspoon garlic powder

Directions
Soak the cashews in the water for 3-4 hours, or overnight.

Process the mixture until it is smooth and creamy.

Sprinkle the cranberries and nuts on top of the cheese layer.
Using the parchment paper, roll the cheese layer into a log shape, pressing the cranberries and nuts into the cheese as it rolls.
Refrigerate until firm, about 20 minutes.
Slice into 1/4-inch rounds and serve.
