Ingredients

  • 1 cup raw cashews
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 cup dried cranberries
  • 1/4 cup chopped nuts of your choice (such as walnuts, almonds, or pecans)

Directions

  1. Soak the cashews in the water for 3-4 hours, or overnight.
  2. Drain and rinse the cashews and place them in a blender or food processor.
  3. Add the lemon juice, nutritional yeast, garlic powder, onion powder, and salt to the blender.
  4. Process the mixture until it is smooth and creamy.
  5. Spread the mixture onto a parchment-lined baking sheet and spread into a 1/4-inch-thick layer with a spatula.
  6. Sprinkle the cranberries and nuts on top of the cheese layer.
  7. Using the parchment paper, roll the cheese layer into a log shape, pressing the cranberries and nuts into the cheese as it rolls.
  8. Refrigerate until firm, about 20 minutes.
  9. Slice into 1/4-inch rounds and serve.
