Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 8 ounces egg noodles
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic; cook and stir until lightly browned, about 5 minutes. Add ground beef; cook and stir until beef is browned and crumbly, about 10 minutes more. Drain off fat.
  3. Stir chili powder, cumin, black beans, diced tomatoes, tomato sauce, green chilies, sugar, and salt into the skillet; cook and stir until heated through. Reduce heat to low and simmer for 5 minutes.
  4. Meanwhile, bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water until just tender, about 5 minutes. Drain.
  5. Spread cooked egg noodles in the prepared baking dish. Pour beef mixture over noodles. Sprinkle cheddar cheese over beef mixture.
  6. Bake in preheated oven for 25 minutes, or until cheese is melted and bubbly.
