Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup pepitas, plus more for topping
  • 1/2 cup pumpkin puree
  • 1/2 cup beer

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine the flours, sugar, baking powder, salt, cinnamon, nutmeg, and ginger. Add in the pepitas and mix until combined.
  3. In a separate bowl, combine the pumpkin and beer. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Transfer the batter to a greased 9-inch loaf pan. Top with extra pepitas.
  5. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool before slicing and serving.
