Ingredients
- 1 pound of cubed beef
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1 onion, diced
- 1 cup of carrots, peeled and diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1/2 teaspoon dried parsley
- 1/4 teaspoon celery seed
- 1/4 teaspoon paprika
- 1/2 cup frozen peas
- Salt and pepper to taste
Directions
- In a large bowl, combine the beef cubes and flour until the beef cubes are completely coated.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and cook until browned, about 5 minutes.
- Add the onion, carrots, and garlic and cook for another 3 minutes.
- Stir in the tomato paste, thyme, oregano, and pepper and cook for an additional minute.
- Add the beef broth, Worcestershire sauce, bay leaves, parsley, celery seed, and paprika and bring to a boil.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Stir in the frozen peas and simmer for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
