Ingredients

  • 1 pound of cubed beef
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 cup of carrots, peeled and diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon paprika
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the beef cubes and flour until the beef cubes are completely coated.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and cook until browned, about 5 minutes.
  3. Add the onion, carrots, and garlic and cook for another 3 minutes.
  4. Stir in the tomato paste, thyme, oregano, and pepper and cook for an additional minute.
  5. Add the beef broth, Worcestershire sauce, bay leaves, parsley, celery seed, and paprika and bring to a boil.
  6. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  7. Stir in the frozen peas and simmer for an additional 5 minutes.
  8. Season with salt and pepper to taste before serving.
