Ingredients

  • 1 ½ cups cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 3 large egg whites
  • ½ teaspoon cream of tartar
  • ½ cup vegetable oil
  • ½ cup strong brewed coffee
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder

Directions

  1. Preheat oven to 350 degrees F. Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, sift together the cake flour, baking powder, baking soda, sugar, and salt.
  3. In a separate large bowl, beat the egg whites and cream of tartar until soft peaks form.
  4. Slowly add the oil, coffee, and vanilla extract to the egg whites while continuing to beat.
  5. Gradually add the dry ingredients to the wet ingredients, a little at a time, while continuing to beat.
  6. Fold in the cocoa powder.
  7. Pour the batter into the prepared pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
