Ingredients
- 2 ripe mangoes, peeled and diced
- 1 English cucumber, peeled and diced
- 2 ripe tomatoes, diced
- 1/2 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1/4 teaspoon chili powder
- Salt and pepper, to taste
Directions
- In a large bowl, combine the mangoes, cucumber, tomatoes, onion, cilantro, olive oil, lime juice, chili powder, salt, and pepper.
- Mix until all of the ingredients are evenly combined.
- Transfer the mixture to a blender and blend until smooth.
- Transfer the blended gazpacho to a large bowl and cover with plastic wrap.
- Refrigerate for at least 1 hour or overnight.
- Serve the chilled gazpacho in individual bowls.
- Garnish with additional cilantro, if desired.
