Ingredients
2 ripe mangoes, peeled and diced
1 English cucumber, peeled and diced
2 ripe tomatoes, diced
1/2 red onion, finely diced
1/4 cup fresh cilantro, chopped

Directions

Transfer the blended gazpacho to a large bowl and cover with plastic wrap.
Refrigerate for at least 1 hour or overnight.
Serve the chilled gazpacho in individual bowls.
Garnish with additional cilantro, if desired.
