Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 English cucumber, peeled and diced
  • 2 ripe tomatoes, diced
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the mangoes, cucumber, tomatoes, onion, cilantro, olive oil, lime juice, chili powder, salt, and pepper.
  2. Mix until all of the ingredients are evenly combined.
  3. Transfer the mixture to a blender and blend until smooth.
  4. Transfer the blended gazpacho to a large bowl and cover with plastic wrap.
  5. Refrigerate for at least 1 hour or overnight.
  6. Serve the chilled gazpacho in individual bowls.
  7. Garnish with additional cilantro, if desired.
