Ingredients
- 2 quarts of water
- 1/2 cup of salt
- 1/2 cup of orange juice
- 1/4 cup of fresh lemon juice
- 2 tablespoons of fresh thyme
- 1 tablespoon of black peppercorns
- 1 bay leaf
Directions
- In a large pot, combine the water, salt, orange juice, lemon juice, thyme, peppercorns and bay leaf. Bring to a boil, reduce the heat to low and simmer for 5 minutes.
- Remove the pot from the heat and let the brine cool completely.
- Once cooled, strain the brine and transfer it to a container or bag large enough to hold the turkey.
- Add the turkey to the brine and make sure it’s completely covered. Refrigerate the turkey in the brine for at least 8 hours or overnight.
- Remove the turkey from the brine, rinse it with cold water and pat dry before roasting.
