Ingredients

  • 1 cup uncooked quinoa
  • 2 cups chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 2 cups broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, combine quinoa, chicken broth, garlic powder, onion powder, paprika, and oregano. Bring to a boil, then reduce heat to low and simmer for 15 minutes, until quinoa is cooked through.
  2. Add broccoli florets to the saucepan and cook for an additional 5 minutes, until broccoli is tender.
  3. Remove from heat and stir in cheddar cheese, sour cream, and Parmesan cheese. Season with salt and pepper to taste.
  4. Serve immediately.
