Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 2/3 cup vegan butter, melted
- 1/2 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/2 cup strong brewed coffee, cooled
Directions
- Preheat oven to 350F (175C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, mash the bananas with a fork. Add the melted butter, coconut sugar, and vanilla and whisk until well combined.
- Add the coffee and stir to combine. Add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
