Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 2/3 cup vegan butter, melted
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled

Directions

  1. Preheat oven to 350F (175C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, mash the bananas with a fork. Add the melted butter, coconut sugar, and vanilla and whisk until well combined.
  4. Add the coffee and stir to combine. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
