Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/4 cup prepared horseradish
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cubed butternut squash
- 1/2 cup chopped zucchini
- 1/4 cup chopped red onion
Directions
- Preheat oven to 400°F.
- Line a baking sheet with parchment paper.
- In a small bowl, combine the olive oil, horseradish, garlic powder, onion powder, paprika, oregano, basil, thyme, salt, and pepper. Mix until combined.
- Place the chicken breasts onto the baking sheet, and brush with the horseradish mixture.
- Scatter the butternut squash, zucchini, and red onion around the chicken.
- Bake for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
