Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/4 cup prepared horseradish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cubed butternut squash
  • 1/2 cup chopped zucchini
  • 1/4 cup chopped red onion

Directions

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, combine the olive oil, horseradish, garlic powder, onion powder, paprika, oregano, basil, thyme, salt, and pepper. Mix until combined.
  4. Place the chicken breasts onto the baking sheet, and brush with the horseradish mixture.
  5. Scatter the butternut squash, zucchini, and red onion around the chicken.
  6. Bake for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
