Ingredients

  • 1/2 cup raisins
  • 1/4 cup dried currants
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 tablespoons cream
  • 1 pastry dough recipe

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, mix together the raisins, currants, melted butter, brown sugar, maple syrup, vanilla extract, nutmeg, cinnamon, cardamom and salt.
  3. Whisk in the eggs and cream until well combined.
  4. Roll out the pastry dough and cut into circles that are slightly larger than the tart pans.
  5. Press the circles into the tart pans.
  6. Spoon the raisin-currant filling into the pastry dough lined tart pans.
  7. Bake for 25-30 minutes, or until the pastry is golden brown.
  8. Allow to cool slightly before serving.
