Ingredients
1 pound Italian sausage, mild or hot
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
2 (14 ounce) cans white beans, rinsed and drained
1 (14 ounce) can diced tomatoes
4 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
Directions
In a large pot over medium-high heat, cook the sausage until browned. Remove from the pot and set aside.
Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 5 minutes.
Add the beans, tomatoes, chicken broth, oregano, and basil to the pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
Add the cooked sausage back to the pot and simmer for an additional 5 minutes.
Season with salt and pepper, to taste.
Serve hot.
