Ingredients

  • 1 pound Italian sausage, mild or hot
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 (14 ounce) cans white beans, rinsed and drained
  • 1 (14 ounce) can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Directions

  1. In a large pot over medium-high heat, cook the sausage until browned. Remove from the pot and set aside.
  2. Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 5 minutes.
  3. Add the beans, tomatoes, chicken broth, oregano, and basil to the pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
  4. Add the cooked sausage back to the pot and simmer for an additional 5 minutes.
  5. Season with salt and pepper, to taste.
  6. Serve hot.
