Ingredients
- 1 pound Italian sausage, mild or hot
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 (14 ounce) cans white beans, rinsed and drained
- 1 (14 ounce) can diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Directions
- In a large pot over medium-high heat, cook the sausage until browned. Remove from the pot and set aside.
- Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Add the beans, tomatoes, chicken broth, oregano, and basil to the pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
- Add the cooked sausage back to the pot and simmer for an additional 5 minutes.
- Season with salt and pepper, to taste.
- Serve hot.
