Ingredients
Cake:
1 cup oat flour
1 cup almond flour
1 cup coconut flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Directions
Preheat oven to 350°F and grease a 9-inch round cake pan.
In a large bowl, mix together oat flour, almond flour, coconut flour, baking powder, baking soda and salt. Set aside.
In a separate bowl, mix together coconut oil, coconut sugar, almond milk and vanilla extract until well combined.
Pour wet ingredients into the dry ingredients and mix until just combined. Do not over mix.
Pour batter into prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Allow cake to cool completely before removing from the pan.
Meanwhile, prepare the filling by combining cubed peaches, coconut sugar, cinnamon, nutmeg and cornstarch in a large bowl. Toss to coat and set aside.
In a separate bowl, mix together coconut milk, powdered sugar and vanilla extract until smooth.
To assemble the cake, place the cooled cake on a serving plate and spread the peach filling over the top. Top with coconut cream and enjoy!
