Ingredients
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 2 cans of diced tomatoes
- 1 can of vegetable broth
- 1 teaspoon of Italian seasoning
- 1/4 teaspoon of red pepper flakes
- 1/2 cup of heavy cream
- 3 cups of baby spinach, chopped
- Salt and pepper, to taste
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
- Add the diced tomatoes, vegetable broth, Italian seasoning, and red pepper flakes. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- Stir in the heavy cream and spinach and cook for an additional 5 minutes.
- Remove from the heat and season with salt and pepper to taste.
- Serve hot.
