Ingredients
1 onion, finely chopped
2 cloves of garlic, minced
1 tablespoon of olive oil
2 cans of diced tomatoes
1 can of vegetable broth
1 teaspoon of Italian seasoning
1/4 teaspoon of red pepper flakes
1/2 cup of heavy cream
3 cups of baby spinach, chopped
Salt and pepper, to taste
Directions
In a large pot, heat the olive oil over medium heat.
Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the diced tomatoes, vegetable broth, Italian seasoning, and red pepper flakes. Stir to combine.
Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
Stir in the heavy cream and spinach and cook for an additional 5 minutes.
Remove from the heat and season with salt and pepper to taste.
Serve hot.
