Ingredients

  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 2 cans of diced tomatoes
  • 1 can of vegetable broth
  • 1 teaspoon of Italian seasoning
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of heavy cream
  • 3 cups of baby spinach, chopped
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  3. Add the diced tomatoes, vegetable broth, Italian seasoning, and red pepper flakes. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  5. Stir in the heavy cream and spinach and cook for an additional 5 minutes.
  6. Remove from the heat and season with salt and pepper to taste.
  7. Serve hot.
