Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes
  • 4 cups collard greens, coarsely chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add garlic, ginger, and red pepper flakes, and cook, stirring, until fragrant, about 1 minute.
  2. Add the collard greens and cook, stirring often, until wilted, about 4 minutes.
  3. Add the soy sauce, brown sugar, and salt and pepper to taste. Cook, stirring, until the sauce is thick and the collard greens are cooked through, about 3 minutes.
  4. Serve over hot steamed rice.
