Ingredients

  • 1 package extra-firm tofu
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 1/4 cup salsa
  • 1/4 cup vegan sour cream
  • 2 cups cooked quinoa
  • 1/2 cup black beans
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced avocado
  • Lime wedges and hot sauce, for serving

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Drain the tofu well and place on the baking sheet. Use a fork or your hands to crumble the tofu into small pieces.
  3. In a small bowl, mix together the garlic powder, chili powder, cumin, smoked paprika, onion powder, sea salt, and black pepper.
  4. Drizzle the tofu with avocado oil, then sprinkle with the spice mixture. Use your hands to mix everything together, until the tofu is well coated.
  5. Bake for 20 minutes, until golden and crispy. Remove from oven and let cool.
  6. To assemble the burrito bowls, divide the quinoa into 4 bowls. Top each bowl with black beans, tomatoes, red onion, cilantro, avocado, salsa, sour cream, and crispy tofu.
  7. Serve with lime wedges and hot sauce, if desired.
