Ingredients
- 1 package extra-firm tofu
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon onion powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 tablespoons avocado oil
- 1/4 cup salsa
- 1/4 cup vegan sour cream
- 2 cups cooked quinoa
- 1/2 cup black beans
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/4 cup sliced avocado
- Lime wedges and hot sauce, for serving
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Drain the tofu well and place on the baking sheet. Use a fork or your hands to crumble the tofu into small pieces.
- In a small bowl, mix together the garlic powder, chili powder, cumin, smoked paprika, onion powder, sea salt, and black pepper.
- Drizzle the tofu with avocado oil, then sprinkle with the spice mixture. Use your hands to mix everything together, until the tofu is well coated.
- Bake for 20 minutes, until golden and crispy. Remove from oven and let cool.
- To assemble the burrito bowls, divide the quinoa into 4 bowls. Top each bowl with black beans, tomatoes, red onion, cilantro, avocado, salsa, sour cream, and crispy tofu.
- Serve with lime wedges and hot sauce, if desired.
