Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1/4 cup vegetable oil
  • Vegetable oil, for frying

Directions

  1. In a medium bowl, combine the flour, sugar, baking powder, and salt. Whisk to combine.
  2. Add the coconut milk and vegetable oil and whisk until the batter is smooth.
  3. Heat a large skillet over medium heat and add vegetable oil to coat the bottom of the pan.
  4. Using a ladle, pour the batter into the skillet and cook for about 2 minutes on each side, until golden brown.
  5. Transfer to a plate and serve with your favorite toppings.
