Ingredients
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1/4 cup vegetable oil
- Vegetable oil, for frying
Directions
- In a medium bowl, combine the flour, sugar, baking powder, and salt. Whisk to combine.
- Add the coconut milk and vegetable oil and whisk until the batter is smooth.
- Heat a large skillet over medium heat and add vegetable oil to coat the bottom of the pan.
- Using a ladle, pour the batter into the skillet and cook for about 2 minutes on each side, until golden brown.
- Transfer to a plate and serve with your favorite toppings.
