Ingredients
1 large head of cabbage
1 onion, diced
2 cloves of garlic, minced
1 cup mushrooms, diced
2 tablespoons olive oil
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup vegetable broth
1/2 cup tomato sauce
1/4 cup vegan sour cream
Directions
Preheat the oven to 350 degrees F.
Remove the core from the cabbage and discard.
Carefully peel off 12-15 leaves from the cabbage and set aside.
In a large skillet over medium heat, add the onion, garlic, and mushrooms. Cook until the vegetables are soft, about 5 minutes.
Add the olive oil, oregano, thyme, basil, salt, and pepper. Cook for an additional 2 minutes.
Add the vegetable broth and tomato sauce. Simmer for 5 minutes.
Add the vegan sour cream and stir until combined. Simmer for an additional 2 minutes.
Place 1/4 cup of the filling onto each cabbage leaf. Roll up each cabbage leaf and place seam side down in a 9x13 baking dish.
Pour the remaining tomato sauce over the top of the cabbage rolls.
Cover the dish with foil and bake for 25 minutes.
Remove from the oven and serve.
