Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, cut into 1-inch slices
  • 6 potatoes, quartered
  • 4 ears of corn, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cups long-grain white rice, cooked

Directions

  1. In a large pot over medium heat, melt the butter and olive oil.
  2. Add the onion and garlic and cook until the onion is tender, about 5 minutes.
  3. Add the chicken broth, Old Bay seasoning, cayenne pepper, and black pepper and bring to a boil.
  4. Add the potatoes and sausage and cook for 10 minutes.
  5. Add the shrimp and corn and cook for an additional 5 minutes.
  6. Serve over cooked white rice.
