Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1/4 cup water
  • 1/4 cup olive oil

Directions

  1. In a medium bowl, combine chicken, almond flour, Parmesan cheese, garlic powder, onion powder, Italian seasoning, sea salt, and black pepper. Mix until all ingredients are combined.
  2. In a separate bowl, whisk together eggs and water.
  3. Add egg mixture to the chicken mixture and stir to combine.
  4. Heat olive oil in a large skillet over medium heat.
  5. Using a spoon or scoop, drop 1/4 cup of chicken mixture into the skillet. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  6. Repeat with remaining chicken mixture.
  7. Serve hot and enjoy!
