Ingredients

  • 2/3 cup olive oil
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup dried cranberries
  • 1 cup chopped pecans
  • 1 teaspoon orange zest

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the olive oil and sugar. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder, and salt; stir into the olive oil mixture alternately with the milk.
  4. Fold in the cranberries, pecans, and orange zest. Pour the batter into the prepared pan.
  5. Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
