Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup masa harina
  • 6 cups vegetable broth
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Juice of 1/2 lime
  • Optional toppings: sour cream, diced avocado, shredded cheese, diced jalapeno

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, chili powder, oregano, cayenne pepper, salt, and black pepper and cook for 1 minute.
  3. Add the masa harina and stir to coat. Add the broth, beans, corn, tomatoes, and cilantro and bring to a boil.
  4. Reduce the heat to low and simmer until the soup has thickened, about 15 minutes.
  5. Stir in the lime juice and season with additional salt and pepper to taste.
  6. Serve the soup with toppings, if desired.
