Ingredients
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground chili powder
- 2 large potatoes, diced
- 1 head cauliflower, cut into florets
- 1/2 cup water
- Salt, to taste
Directions
- Heat the oil in a large skillet over medium heat.
- Add the cumin seeds and garlic and cook for about 1 minute.
- Add the turmeric, cumin, coriander, and chili powder, and stir to combine.
- Add the potatoes and cauliflower and mix to coat in the spices.
- Add the water and season with salt to taste.
- Cover and cook for about 20 minutes, stirring occasionally, until the vegetables are tender.
- Remove the lid and cook for an additional 5 minutes to evaporate any remaining liquid.
- Serve warm.
