Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1 tablespoon Italian seasoning
- 1 (14.5-ounce) can diced tomatoes
- 4 cups vegetable broth
- 1 (15-ounce) can white beans, drained and rinsed
- 1 (15-ounce) can red beans, drained and rinsed
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, celery, and carrot and cook for 5 minutes, stirring occasionally.
- Add the Italian seasoning and cook for 1 minute.
- Stir in the diced tomatoes and vegetable broth and bring to a boil.
