Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1 tablespoon Italian seasoning
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 (15-ounce) can red beans, drained and rinsed
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, celery, and carrot and cook for 5 minutes, stirring occasionally.
  3. Add the Italian seasoning and cook for 1 minute.
  4. Stir in the diced tomatoes and vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Add the white and red beans and simmer for 5 minutes.
  7. Season with salt and black pepper to taste.
  8. Stir in the parsley and serve.
