Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup chicken broth
  • 1 tablespoon tomato paste
  • 1/4 cup golden raisins
  • 2 cups cooked white rice

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until golden brown, about 5 minutes per side.
  2. Remove the chicken from the skillet and set aside. Add the onion to the skillet and cook until softened, about 5 minutes.
  3. Add the garlic, paprika, cumin, and cinnamon to the skillet and cook until fragrant, about 1 minute.
  4. Add the chicken broth, tomato paste, and golden raisins to the skillet and stir to combine. Return the chicken to the skillet and bring the mixture to a simmer.
  5. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. Serve the chicken and sauce over the cooked rice.
