Ingredients

  • 2 lb pork loin
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together the garlic, salt, pepper, rosemary, oregano, and thyme.
  3. Rub the pork loin with the olive oil, and then rub the seasoning mixture onto the pork.
  4. Place the pork loin in a roasting pan, and roast in the preheated oven for 50 to 60 minutes, or until the internal temperature of the pork is 145 degrees F (63 degrees C).
  5. Remove the pork loin from the oven and let rest for 10 minutes before slicing.
