Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon dried oregano
- 2 sweet potatoes, peeled and diced
- 4 cups vegetable broth
- 1 can (14oz) diced tomatoes
- 1 cup cooked cannellini beans
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic and bell pepper, and cook until the vegetables are softened, about 5 minutes.
- Add the oregano, sweet potatoes, vegetable broth, and tomatoes. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let simmer for 10 minutes.
- Add the beans and season with salt and pepper. Simmer for an additional 5 minutes.
- Serve the soup hot and enjoy!
