Ingredients

  • 1 cup of dried cherries
  • 1 cup of dried cranberries
  • 1 cup of chopped pecans
  • 1 cup of chopped walnuts
  • 1/2 cup of packed light brown sugar
  • 1/2 cup of honey
  • 1/4 cup of melted butter

Directions

  1. In a large bowl, mix together the cherries, cranberries, pecans, walnuts, and brown sugar.
  2. In a medium bowl, whisk together the honey and melted butter until the mixture is smooth.
  3. Pour the honey mixture over the dried fruit and nut mixture and stir to combine.
  4. Line an 8-inch round cake pan with parchment paper.
  5. Press the fruitcake mixture into the prepared pan and spread evenly.
  6. Cover the pan with aluminum foil and place it in the refrigerator for at least 4 hours, or overnight.
  7. When ready to serve, remove the cake from the refrigerator and invert onto a serving plate.
  8. Slice and serve.
