Grilled Chicken Caesar Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • ¼ cup Caesar dressing, plus more for serving
  • 2 heads Romaine lettuce, chopped
  • 1 cup croutons
  • ¼ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Heat a grill or grill pan to medium-high heat. Season chicken breasts with salt and pepper and brush with the Caesar dressing.
  2. Grill chicken for 5-7 minutes per side, or until cooked through. Set aside and let cool.
  3. In a large bowl, combine Romaine lettuce, croutons, and Parmesan cheese. Toss with enough dressing to lightly coat the salad.
  4. Slice chicken and add to the salad. Toss to combine and season with salt and pepper, if desired.
  5. Serve with extra dressing on the side.
