Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped toasted pistachio nuts

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the oregano and cook for 1 minute.
  4. Add the garbanzo beans, vegetable broth, and lemon juice. Simmer for 10 minutes.
  5. Season with salt and pepper, to taste.
  6. Stir in the parsley and pistachio nuts and cook for 1 minute.
  7. Serve warm.
