Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 cup diced potatoes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup fresh parsley, chopped (optional)

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the ground turkey and cook until it is browned, about 10 minutes.
  4. Add the chicken broth, carrots, celery, potatoes, thyme, oregano, basil, black pepper, paprika, garlic powder, and cayenne pepper and stir to combine.
  5. Bring the soup to a boil, reduce the heat to low, and simmer for 30 minutes.
  6. Stir in the parsley, if using, and serve.
