Ingredients
1 cup blueberry jam
4 crepes
1/2 cup cream cheese
1/3 cup heavy cream
1 teaspoon vanilla extract
2 tablespoons sugar

Directions
In a small bowl, mix together cream cheese, heavy cream, vanilla extract, sugar, and cinnamon until smooth and creamy.
On a clean work surface, lay out two of the crepes.
Spread 1/4 cup of blueberry jam over each crepe.
Divide the cream cheese mixture between the two crepes and spread evenly.
Top each crepe with the remaining two crepes.
Carefully roll up each crepe, tucking in the ends as you go.
Heat a large skillet over medium heat and spray with non-stick cooking spray.
Add the two rolled blintz wiches to the skillet and cook for 2-3 minutes per side, or until golden brown.
Serve immediately.
