Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup pecan halves
  • 1/4 cup diced red onions
  • 1/2 cup diced celery
  • 1/2 cup diced sweet bell peppers
  • 3/4 cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F.
  2. Place the chicken breasts on a baking sheet and season with salt and pepper.
  3. Bake for 25-30 minutes until cooked through.
  4. Let the chicken cool and then dice into small cubes.
  5. In a large bowl, combine the diced chicken, pecans, red onions, celery, and bell peppers.
  6. In a small bowl, whisk together the mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
  7. Pour the mayonnaise mixture over the chicken and vegetables and mix until everything is evenly coated.
  8. Refrigerate for at least 30 minutes before serving.
