Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 2 tablespoons dried basil
  • 2 tablespoons dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic and sauté until softened, about 5 minutes.
  3. Add the potatoes, vegetable broth, tomatoes, and herbs, and bring to a boil.
  4. Reduce heat to low and simmer for 20 minutes.
