Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup butter, softened
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup butterscotch chips

Directions

  1. Preheat oven to 350F. Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk and vanilla.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in the butterscotch chips.
  5. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
