Quick Garlic Aioli
Ingredients
1 tablespoon olive oil
1/2 small onion, diced
1/2 red bell pepper, diced
1/2 teaspoon chili powder
1/2 teaspoon garlic powder

Crack the eggs into the skillet. Reduce the heat to medium-low and cook, stirring occasionally, until the eggs are cooked to your desired doneness.
Warm the tortillas in the microwave or a skillet. Divide the potato and egg mixture among the tortillas and top with your favorite toppings.
