Ingredients

  • 1 tablespoon olive oil
  • 1/2 small onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt, or to taste
  • 1 large potato, diced
  • 4 eggs
  • 4 small flour tortillas
  • Optional toppings: salsa, sour cream, cheese, cilantro, avocado, etc.

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and bell pepper and cook until softened, about 3 minutes.
  3. Add the chili powder, garlic powder, cumin, paprika, and salt. Stir to combine.
  4. Add the potatoes and stir to coat in the spices. Cook, stirring occasionally, until the potatoes are tender and golden brown, about 7 minutes.
  5. Crack the eggs into the skillet. Reduce the heat to medium-low and cook, stirring occasionally, until the eggs are cooked to your desired doneness.
  6. Warm the tortillas in the microwave or a skillet. Divide the potato and egg mixture among the tortillas and top with your favorite toppings.
  7. Enjoy!
