Ingredients

  • 2 tablespoons of olive oil
  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 1 cup of marinara sauce
  • 1 can (14.5 ounces) of diced tomatoes, drained
  • 1 can (6 ounces) of tuna, drained
  • 1 teaspoon of Italian seasoning
  • 1/4 cup of black olives, sliced
  • 2 tablespoons of capers, drained
  • 2 tablespoons of chopped fresh parsley
  • 1/2 cup of shredded mozzarella cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook, stirring until softened, about 5 minutes. Add marinara sauce and tomatoes and bring to a simmer. Cook for 5 minutes, stirring occasionally.
  3. Stir in tuna, Italian seasoning, olives, and capers. Remove from heat and season with salt and pepper. Spoon into a 2-quart baking dish.
  4. Bake in preheated oven for 20 minutes. Sprinkle with parsley and mozzarella cheese and bake for an additional 5 minutes, or until cheese is melted.
  5. Serve warm.
