Directions
In a large saucepan, combine the rice, salt, pepper, garlic powder, onion powder, and cayenne pepper. Heat the oil over medium heat and add the onion. Cook, stirring occasionally, until the onion is softened, about 3 minutes. Add the black-eyed peas and chicken broth and bring to a boil.
Reduce the heat to low, cover the pan, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed. Fluff the rice with a fork before serving.
