Ingredients

  • 2 lbs chicken thighs, boneless, skinless
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 onions, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 pita breads
  • 1/2 cup hummus
  • 1/2 cup tzatziki sauce
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumbers, diced
  • 1/4 cup fresh parsley, chopped

Directions

  1. In a large bowl, combine chicken thighs, olive oil, lemon juice, garlic, onions, cumin, chili powder, paprika, oregano, salt, and pepper. Mix until the chicken is evenly coated.
  2. Cover the bowl with plastic wrap and marinate for at least 2 hours, or overnight in the refrigerator.
  3. Preheat oven to 375°F (190°C).
  4. Place the chicken and marinade in a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through.
  5. Heat the pita breads in the oven for 5 minutes.
  6. Assemble the shawarmas: Spread hummus on each pita bread. Top with chicken, tzatziki sauce, feta cheese, tomatoes, cucumbers, and parsley.
