Ingredients
1/2 pound cooked lobster meat, chopped
2 ripe avocados, diced
1/2 cup diced mango
1/4 cup diced red onion

Directions
In a medium bowl, combine the lobster, avocado, mango, red onion, cilantro, lime juice, salt, and pepper.
Soak a rice paper wrapper in warm water for about 10 seconds until it becomes pliable.
Lay the wrapper out on a flat surface and place a heaping tablespoon of the lobster mixture in the center.
Fold the top and bottom edges of the wrapper over the filling.
Fold in the left and right edges of the wrapper to form a tight roll.
Repeat with remaining wrappers and filling.
Serve the summer rolls with mango coulis.
