Ingredients
8 ounces lo mein noodles (or spaghetti)
1 tablespoon oil (vegetable, canola, or peanut)
1 pound raw shrimp, peeled and deveined
1 clove garlic, minced
1 teaspoon fresh ginger, minced
1/2 teaspoon red pepper flakes, optional
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1/4 cup water
1/2 teaspoon cornstarch
2 cups fresh vegetables of your choice (I used red bell pepper, carrots, and snow peas)
1/4 cup green onions, sliced
1 tablespoon sesame seeds, optional
Directions
Cook the lo mein noodles according to package directions. Drain and set aside.
Heat the oil in a large pan or wok over medium-high heat.
Add the shrimp, garlic, ginger, and red pepper flakes, if using, and cook for 2-3 minutes, stirring occasionally, until the shrimp are cooked through.
In a small bowl, whisk together the soy sauce, rice vinegar, honey, water, and cornstarch.
Add the soy sauce mixture to the pan and bring to a simmer. Add the vegetables and cook for 2-3 minutes, until the vegetables are crisp-tender.
Add the cooked noodles to the pan and toss to combine. Cook for 1-2 minutes, until everything is heated through.
Garnish with green onions and sesame seeds, if desired.
Serve immediately.
