1 lb. boneless, skinless chicken breasts, cut into thin strips
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
Directions
Preheat oven to 350°F.
In a medium bowl, combine the chicken strips, olive oil, garlic powder, basil, salt, and pepper. Toss to coat evenly.
Divide the chicken strips into four equal portions. Place each portion onto a sheet of wax paper. Top each portion with 1 tablespoon of mozzarella cheese and 1 tablespoon of cheddar cheese.
Roll each portion of chicken into a tight bundle and secure with a toothpick. Place the bundles onto a greased baking sheet.
Bake for 20 minutes or until chicken is cooked through.
