Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 pound lean ground beef
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can red kidney beans, drained and rinsed

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  2. Add the ground beef and cook, stirring and breaking it up with a spoon, until it is no longer pink, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, salt, and pepper and cook for 1 minute.
  4. Add the diced tomatoes, tomato sauce, and kidney beans and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 45 minutes.
  5. Serve hot with your favorite toppings such as sour cream, shredded cheese, diced avocado, or chopped green onions.
