- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 pound lean ground beef
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can red kidney beans, drained and rinsed
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Add the ground beef and cook, stirring and breaking it up with a spoon, until it is no longer pink, about 5 minutes.
- Stir in the chili powder, cumin, oregano, salt, and pepper and cook for 1 minute.
- Add the diced tomatoes, tomato sauce, and kidney beans and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 45 minutes.
- Serve hot with your favorite toppings such as sour cream, shredded cheese, diced avocado, or chopped green onions.
