Directions
- In a large bowl, combine the black beans, pinto beans, white beans, bell peppers, and red onion.
- In a small bowl, whisk together the olive oil, white vinegar, garlic, sugar, salt, black pepper, chili powder, and cumin.
- Pour the dressing over the bean mixture and stir to combine.
- Cover the bowl and place in the refrigerator for at least 2 hours, or overnight.
- Serve the bean relish chilled or at room temperature.
