Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin

Directions

  1. In a large bowl, combine the black beans, pinto beans, white beans, bell peppers, and red onion.
  2. In a small bowl, whisk together the olive oil, white vinegar, garlic, sugar, salt, black pepper, chili powder, and cumin.
  3. Pour the dressing over the bean mixture and stir to combine.
  4. Cover the bowl and place in the refrigerator for at least 2 hours, or overnight.
  5. Serve the bean relish chilled or at room temperature.
